Fluffy and tender and noms. Also in almond variety!

Ingredients

  • 3 cups flour
  • 1 tsp. baking soda
  • 2 tsp. cream of tartar
  • 1 tsp. salt
  • 3/4 stick butter, cold
  • 1/4 cup plain yogurt
  • 1/4 cup cream
  • 1/2 cup milk

Preheat oven to 450F. Combine all dry ingredients. Chop butter into small pieces and rub into flour until mixture resembles coarse crumbs. Make a well in the center. Combine the wet ingredients and pour them in. With fingers, lightly fold together until you have a dough.

Roll to about 3/4" thickness and cut. Bake for 10 minutes, or until puffy and browning at the edges.

For almond scones: Replace 1/2 cup of flour with almond flour. Add 2 tablespoons of sugar. Add 1/4 teaspoon almond extract with the wet ingredients. Fold in 2/3 cup sliced almonds near the end.

pffffffffffft (a) I am not a True Believer on the topic of scones, and (b) genuinely the only thing I'd change is using a more acidic dairy thing rather than the cream of tartar :-p (because in the thing I do, buttermilk carries the acid necessary for etc etc etc)

I mean and MAYBE make them a bit thicker but ehhhhh.
